How to do:
- Cook the pasta in a large pot of boiling water for 8-10 minutes or until al dente.
- While the water is boiling, heat the olive oil in a large skillet over medium heat. Add bacon or pancetta and cook gently until lightly browned. Add the garlic and cook for another minute, then turn off the heat and place the garlic in a large bowl.
- While the pasta is cooking, make the sauce. In a small bowl, whisk the eggs and cheese together until there are no lumps.
